This recipe is fantastic as you can adjust the spice mix to suit yourself. To make it even better the recipe comes with a tasty sauce that uses the same spice mix.

INGREDIENTS

1kg Chicken Wings

3 cups Buttermilk

1/2 cup Lupi Extra Virgin Olive Oil

1/2 cup Flour

1/2 cup Cornflour Oil for frying
Spice Mix:
- 3 Tbsp Cayenne Pepper (more or less as desired)
- 5 Tbsp Onion Powder
- 5 Tbsp Garlic Powder
- 5 Tbsp Sweet Paprika
- 4 Tbsp Brown Sugar
- 2 Tbsp Salt
- 1 Tbsp Black Pepper
RECIPE INSTRUCTIONS
- Mix together all the ingredients of the spice mix. In a large bowl, mix 8 tablespoons of the spice mix with the buttermilk and add the chicken wings. Marinade in the fridge for at least 4 hours or overnight if possible.
- Heat the oil to 170°C. Mix the flour, cornflour and 8 tablespoons of the spice mix together in a shallow dish. Place the chicken wings, one at a time, into the flour mix. Cook for 8-10 minutes in the oil and drain.
- Mix the Lupi Extra Virgin Olive Oil and the rest of the spice mix in a bowl. Baste the chicken wings with the oil mixture and serve hot.
