Baked Mediterranean Fish

Individual fish parcels with olives, tomatoes, herbs and extra virgin olive oil.

PRE TIME 40 minutes


  • 2 fillets NZ Hoki, or similar
  • 4-6 Olives, sliced
  • 1/2 cup Rocket Leaves
  • 4 sprigs fresh Parsley
  • 1 Tomato, diced
  • A generous drizzle of Lupi Extra Virgin olive oil


    1. Preheat your oven to 180ºC. Rip two pieces of baking paper, both twice as long as the fillet.
    2. Place the each fillet on its own piece of baking paper and divide the olives, rocket, parsley and tomato over one end of the fillets. Fold the top of the fillet over the filling and drizzle with Lupi Extra Virgin Olive Oil Special Selection Classic Taste. Sprinkle with freshly ground pepper.
    3. Lift the baking paper together over the fillet and fold down till you can’t fold it anymore. Then tuck the ends under the fillet and place on the oven tray. Bake for 20-30 minutes until the fish is cooked. Serve with your favourite salad or vegetables in the packet for a bit of theatre!
